Ingredients
- 2 pounds beef stew meat, cubed
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
Instructions
- Prepare the beef and vegetables. Trim excess fat and pat the beef dry. Peel and slice carrots, dice potatoes, chop onion, and mince garlic.
- Layer the ingredients in the slow cooker. Place beef at the bottom, then add carrots, potatoes, onion, and garlic.
- Mix the liquid base. Whisk together beef broth, tomato paste, thyme, salt, black pepper, and bay leaf.
- Combine and cook. Pour the broth over the ingredients, cover, and set to low for 8 hours or high for 4 hours.
- Finish and serve. Remove the bay leaf, stir, adjust seasoning, and ladle into bowls.
Notes
- For deeper flavor
- brown the beef before adding it to the slow cooker. Leftovers taste even better the next day as the flavors meld.
