- 2 Tbsp Worcestershire sauce
- 1 Tbsp soy sauce
- 1 tsp dried thyme
- 1 bay leaf
- Salt and freshly ground black pepper

Instructions
- Season and sear the ribs: Pat the short ribs dry, season with salt and pepper, and sear in olive oil until browned on all sides.
- Transfer to a plate.,Sauté the aromatics: In the same skillet, cook onion, carrots, and celery until softened, then add garlic and tomato paste and cook briefly.,Deglaze and build the braising liquid: Add grape juice to deglaze, reduce by half, then stir in beef broth, Worcestershire sauce, soy sauce, thyme, and bay leaf.
- Adjust seasoning.,Transfer to the crockpot: Place the seared ribs in the crockpot and pour the braising liquid over them.
- Cover and cook on low for 8 hours.,Finish the sauce: Remove ribs, discard bay leaf, and thicken the sauce if desired by reducing or adding a cornstarch slurry.
